Apple Peanut Butter & Mocha Chocolate Chip Cookies

 Both of these recipes are fairly fool proof and extremely delicious. Promise.

I can guarantee these won't last very long. 

 Apple Peanut Butter Cookies
1/2 cup shortening
1/2 cup peanut butter [I prefer smooth]
1/2 cup sugar
1/2 cup packed brown sugar
1 egg
1/2 tsp. vanilla
1 1/2 cups flour*
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. ground cinnamon
1 cup peeled, chopped [tiny pieces] apple

Step 1: In a large bowl, cream the shortening, pnut butter, and sugars until light and fluffy. Beat in the egg and vanilla. Combine the dry ingredients; gradually add to the creamed mixture and mix well. Stir in the apples.

Step 2: Drop by rounded tablespoon full 2in. apart on a greased baking sheet. Bake at 375F for 10-12 minutes or until golden brown.  Yields about 2 dozen.

 Coffee and chocolate together...need I say more?

Mocha Chocolate Chip Cookies
1/4 cup instant coffee
2 tbsp. boiling water
1/2 cup butter, softened
3/4 cup sugar
1/2 cup packed brown sugar
1 egg
1 tsp. vanilla
1 1/2 cups flour*
1/4 tsp. baking soda
Dash of salt
1 12oz. package of milk chocolate chips

1 1/2 cups chopped walnuts, option [I say why ruin them with nuts...]

Step 1: In a small bowl, combine coffee and water, set aside. Cream together butter and sugars until light and fluffy. Beat in the egg and vanilla

Step 2: Combine the flour, baking soda, and salt. Add to the creamed mixture alternately with reserved coffee mixture, beating well after each addition. Stir in chocolate chips [and nuts]. Cover and refrigerate for 30 minutes.

Step 3: Place rounded tablespoon full 2in. apart on a greased baking sheet. Bake at 350F for 10-12 minutes or until golden brown. Yields about 3 dozen.         


*[if you want to make them gluten free, used buckwheat flour, just make sure the package says 'gluten free', which ensures it's not been processed in the same place as wheat flour. Buckwheat flour won't alter the texture or taste]*
